Black Sole Gratin with Broccoli and Cheese Sauce

Ingredients: (Serves 2) Black Sole Fillets, 75g Broccoli, 300g cheese sauce, 2 teaspoons of Lemon juice, 1 knob of butter, 10g grated parmesan, cayenne pepper, salt and black pepper.

Method: First, tip the broccoli stalks and all, into a food processor, chop fairly finely into roughly 1 cm chunks. Transfer to a steamer and steam until just tender, don’t overcook the broccoli. Next season the Dover sole fillets with salt and pepper and sprinkle with lemon juice. Grease a baking tray with a knob of butter and put it under the grill to heat up. When the tray is really hot, place the Black Sole fillets on it. They will sear and sizzle as they touch the hot metal, grill them for 3 minutes. When the time is up, remove the tray and then spoon the broccoli over the Black Sole fillets, spreading it out as evenly as possible. Using a palette knife spread the cheese sauce over the broccoli, and finally sprinkle with the Parmesan cheese. Place the tray under the grill again for a further 4-5 minutes until the top is bubbling and turning golden. Sprinkle each one with a pinch of cayenne pepper and serve with steamed / boiled potatoes.
